The mission of the Ludlow High School Family and Consumer Science Department is to develop and nurture resilience, foster social, intellectual, economic, emotional, and physical health and well-being of individuals and families; empower students to take charge of their lives, to maximize their potential, and to function independently and interdependently; and enhance the quality of the environments in which individuals and families function.
The Family and Consumer Science Department offers courses which provide a variety of experiences directed toward the goal of improving family relationships, consumer management, nutrition, and parenting. All students would benefit from courses in this area. Those with interest in careers in early childhood education, fashion, food service, nursing, or social work are encouraged to prepare themselves by taking the appropriate course in the family and consumer science curriculum.

COURSE CREDITS

This course is designed to include wardrobe planning, clothing and textile related careers, the impact of technology and media on clothing choices, consumerism and responsibilities, components of fabric construction and properties, and proper maintenance of textile products. Students will learn the use of basic sewing construction and techniques for clothing and leisure activities, including various needle arts.

This course examines the physical, social, emotional, and intellectual development of the preschool child. Parenting skills and experiences leading to careers in preschool education are stressed. The students will gain practical experience in promoting a wholesome and safe atmosphere for children, guiding children's behavior in creative and responsible ways, and observing early childhood development. Students will plan, prepare, and lead preschool sessions.

COURSE CREDITS

This course provides comprehensive coverage of all stages of child and family development. The first half of the course is spent on issues which affect the student before the birth of a child. Topics include population changes, family violence, reproduction, contraception, abortion, and sterilization. Prenatal development and nutrition emphasize the health of both mother and child. The birth process, care of the newborn, and the expectations of the first year of life include involvement by both father and mother. The last half of the course involves discussion of the child's physical, mental, social, and emotional development. The normal sequence of growth and uniqueness of each individual are key concepts. Positive discipline methods are stressed.
The sequence of courses, Early Childhood and Family Development provides invaluable preparation for students interested in a career in the field of early childhood education.

This course emphasizes the development of life-survival skills based on self-awareness, decision-making and problem-solving skills. It combines the practical aspects of living on ones own, writing a resume, getting a job, getting credit and using it wisely, finding a place to live, decorating, meal planning, leisure activities, and doing basic wardrobe selection, care, and repairs with hands-on experiences in each unit.

This course is based on the food pyramid, U.S. Department of Agriculture (USDA) and U.S. Department of Health and Human Services research. Students are encouraged to make wise food choices in keeping with nutrient needs. All of the important nutrients are studied and students prepare recipes, which include each nutrient. Students work in groups, use good kitchen sanitation and are encouraged to try everything that is prepared. Use and care of equipment including a microwave, food processor, and blender are included. Foods prepared stress low-fat, low-salt, and high-nutrient content. Also, reading and understanding food labels is discussed.

COURSE CREDITS

Topics included in this course are advanced nutrition, food science, meal planning, kitchen management, comparison shopping, budgeting, and more advanced food preparation techniques. Units on regional and foreign foods, different types of equipment, and new products may be studied. Students must work cooperatively in groups and are encouraged to try all foods that are prepared. This course will include practical experience of working in food service with the cafeteria. Students will be reinforcing the skills and knowledge learned in Nutrition 1.
Note: The Family Development and Early Childhood classes have been accepted for articulation with Holyoke Community College (HCC). To articulate, students must take these classes during their junior or senior year, must obtain a "B" or better in both classes, and be eligible for HCC's English 101 by taking the AccuplacerŽ College Placement Test at Holyoke Community College. These two classes will articulate as HCC's EDU 101 in the Early Childhood program.
